Granny Smith Cinnamon Muffins



Gluten free baking can sometimes feel like a guessing game!  Sometimes I try substituting gluten free ingredients into a regular recipe and it just doesn't work. But sometimes it does!   

David Venable from QVC shared a great muffin recipe, and it was so easy to make it gluten free just by substituting in gluten free flour! And the muffins turned out so yummy!! 

Here's the recipe:
  • 3 cups all-purpose gluten free flour (I use Betty Crocker GF Rice Flour Blend)
  • 1 1/2 cups white sugar
  • 1 tsp salt
  • 4 tsp baking powder
  • 2 tsp ground cinnamon
  • 2/3 cups vegetable oil
  • 2 eggs
  • 2/3 cups milk
  • 3 Granny Smith apples, peeled and grated

  • Preheat the oven to 375°F. Grease a muffin pan. 

  • Mix flour, sugar, salt, baking powder, and cinnamon in a large bowl. Stir with spoon till combined.

  •  Add the oil, eggs, and milk. With a hand mixer beat till combined, but don't over mix. 

  • Pour in the apples and stir them in gently with a spoon.  

  • Spoon the batter into muffin pan.

     Sprinkle just a little more cinnamon on each muffin before cooking.

     Bake for 20-25 minutes, or until the cupcakes are set.

    This recipe makes a LOT of muffins :) I made 12 and had batter left over!

    Remove from oven and allow to cool a little.

   Enjoy!

Crustless Sausage Spinach Cheddar Quiche





This crustless sausage spinach cheddar quiche is just so incredibly yummy! Simple ingredients, simple steps, but amazing flavor! 




  • 4 eggs
  • 1 cup milk
  • 1 lb gluten free Italian bulk sausage (I use Ingles Markets brand)
  • 1 container fresh organic baby spinach
  • 1-2 cups sharp cheddar cheese, grated 
  • 1/2 or 3/4 tbsp onion powder (I use McCormick brand)
  • Salt and pepper, to taste
Brown and break up the sausage until it is cooked and no longer pink.
Drain and set aside
Cook spinach. This doesn't take long at all...just melt some butter in pot or deep pan, add spinach. Cover and cook over medium heat for just a few minutes till done.
Drain liquid from spinach and set aside.

Preheat oven to 375 degrees.
In large bowl combine sausage, spinach, eggs, milk, cheddar cheese, onion powder and salt and pepper.
Stir till combined.

Pour the quiche mixture into a greased pie plate. Place in oven and cook for 30-35 minutes until golden brown and center is set.

Enjoy...and try not to eat the whole thing at once :)

Gluten Free Blueberry Muffins

Pam from imaceliac.com shared a delicious recipe for Sour Cream Blueberry Muffins. The recipe is simple and sounded great.  We are trying to cut down on sugar, so I wondered what would happen if substituted honey for the sugar called for in the recipe.  So I studied up on how to do this, gave it a try...and the muffins turned out so great!!  Here's the recipe...

Ingredients:
1 1/2 cups gluten free all purpose flour (I use Betty Crocker GF all purpose rice blend)
1/2 tsp salt
2 tsp GF baking powder (I use Clabber Girl)
1/3 cup natural applesauce
1 tsp GF vanilla extract
1 egg
3/4 cup honey
1/2 cup sour cream
1 cup frozen blueberries

Preheat oven to 375 degrees.

In large bowl, combine all ingredients except blueberries.  Now when you dump all this in the bowl, it will look like a hot mess, but trust me, it will turn out just fine!

Using a hand mixer, mix ingredients till well combined.  See, now it looks like muffin batter :)

Once batter is mixed, pour in the blueberries.  Gently stir them into batter with a spoon, just till combined.

Grease a muffin pan (I use Temptations ceramic ovenware, which works great) and fill muffin cups till almost full.  

Bake for 20-25 minutes. Stick a knife in one of the muffins to make sure they are done :)

Remove from oven and allow to cool for a few minutes.

If you like, cut open the muffins and add a little butter...makes them even better!

Carrot Egg Scramble

I love scrambled eggs and when I found this recipe for carrot egg scramble at Raia's Recipes, I thought it was a nice twist on a classic dish.  It turned out soooo yummy! 

3-4 organic baby cut carrots grated or very thinly diced
3 tsp. milk (or a little more~about 1 tsp of milk per egg) I just estimate :)
3 eggs
1/2 tbsp dried parsley
1/4 tsp. garlic salt
1/4 tsp. onion powder
1/2 tsp. salt
1/2 - 1 c. shredded or thinly diced cheddar cheese

dash of pepper

Combine all ingredients in large bowl with wire whisk.  Melt 1 tbsp GF butter in skillet over medium heat. Pour mixture into skillet. Cook eggs till done, stirring/flipping till cooked.

Gluten Free Strawberry Vanilla Muffins

I found a cranberry vanilla muffin recipe a while back that I've been wanting to try.  But since I'm not wild about cranberries, I though I'd use strawberries instead....and since I had some wonderful strawberries from the local farm here, I thought I'd make them this morning!  They turned out soooo yummy!

I did make a few changes to the original recipe. Here's a link to the original recipe from Once a Month Mom.

Here's what I did...

Ingredients....

  • 1 cup sorghum flour
  • 1 cup tapioca flour
  • 1 cup sugar 
  • 1 teaspoon gluten free baking powder
  • 1 teaspoon gf baking soda
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg 
  • 3 tablespoons melted coconut oil
  • 1 1/2 tablespoon gluten free vanilla extract
  • 1 1/2 cup chopped fresh strawberries

Directions:

Preheat oven to 350 degrees F. Grease muffin tins w/ GF butter or use paper liners  Set pan aside.
In a mixing bowl whisk the dry ingredients together well.  Mix in the wet ingredients, except strawberries until batter is smooth using a mixer.  Do not over beat.  Fold in fruit.  Fill muffin tins 3/4 full with batter.
Bake for 20 – 25 minutes at 350 until muffins are done, using a toothpick or thin sharp knife to see if batter is baked through.

Gluten Free Breakfast Casserole

I love breakfast casserole. It is my favorite breakfast dish ever. But every time I tried to make it myself, I never could get it quite right. That was until my cousin shared her breakfast casserole recipe with me. It's delicious! Here's the recipe GF!

2-3 slices of GF bread (I use Udi's GF white sandwich bread and may use 4 pieces, since they are smaller than the regular loaves)

1 lb GF bulk sausage, browned and broken up (I use Ingles Markets Gluten Free Italian Bulk Sausage)

1 cup shredded cheese

6 eggs

2 cups milk

Tear bread into pieces and place in bottom of baking dish.

Sprinkle cooked sausage over bread.
Sprinkle grated cheese over sausage.

In a separate bowl, whisk eggs and milk together.

Pour over bread, sausage, and cheese.

Refrigerate. You could refrigerate overnight and cook for breakfast. I have also put this together in the morning, refrigerated it all day and cooked it for supper.

Cook for 1 hr @350. (I usually cook it about 5 minutes longer, just keep an eye on it till it's done)

Friday Favorites....King Arthur Flour Gluten Free Mixes


You are probably already familiar with King Arthur Flour's line of gluten free products. If not though, you should give them a try! I love them! The muffin mix is yummy with blueberries added in, and I have even squeezed some fresh orange juice in with the mix before too :). And the brownies....oh the brownies...they are delicious! My family is coming over for dinner this weekend and for dessert I'm planning on serving the brownies with GF vanilla ice cream and GF chocolate syrup...tasty! These King Arthur Flour mixes are certified gluten free and made in a dedicated GF facility :). They also make other mixes too :)

Cheater's GF Huevos Con Chorizo....

Before going gluten free, I loved to go to the local Mexican restaurant and order the huevos con chorizo....I think I could have eaten that amazing dish 3 times a day! Chorizo sausage and eggs with jalapenos drenched in salsa, oh my goodness! Yesterday I got a craving for this delicious dish. But not having any chorizo; not knowing if I could find GF chorizo if I wanted to; and never having cooked it in my life anyway....I used what I had on hand, gluten free bulk pork sausage. I was thrilled to find it complete with a big "gluten free" label while shopping this week. I looked at a number of recipes, and basically followed this one http://whatscookingmexico.com/2008/04/13/chorizo-and-eggs/ , with a few changes. Of course, my dish didn't quite have the kick of the original with the chorizo, but it was still yummy...

Here's what I used
1 lb GF pork sausage (bulk sausage, not links) ~I have also used GF Italian bulk sausage and it gave this dish a great flavor

1 small onion diced

5 eggs

almond milk or regular milk

salt and pepper

oregano

oil or GF butter

GF salsa

GF jalapeno slices

Here's what I did
dice small onion

brown and break up sausage with the onion until sausage is no longer pink
set aside

crack eggs into medium bowl

add about 4-5 teaspoons milk (about 1 tsp for each egg)

add salt and pepper

add a few dashes of oregano

whisk together

In a separate pan, heat oil or butter on med heat.

once oil or butter is heated, pour in eggs

spoon in the cooked sausage

scramble the eggs with the sausage till eggs are done

pour egg and sausage mixture onto plate

top with jalapenos and salsa

A Yummy "Breakfast" Sandwich

So I was hungry for lunch today and got the idea to make a "breakfast" sandwich. In my opinion breakfast food can be eaten anytime of the day! So here's what I came up with...a yummy bacon and egg sandwich, with a little kick!

Here's what I used...

2 eggs

butter or oil

4 slices bacon (I use Hormel Black Label)

salt and pepper

Hellman's Real Mayonnaise

Melinda's Hot Sauce

Udi's GF White Sandwich Bread

Here's what I did...
Crack 2 eggs into medium bowl.
Salt and pepper to taste
Whisk the eggs
Heat the butter or oil in the pan
Scramble eggs
Set aside

Cook bacon according to directions.
(I always just stick it in the microwave between paper towels)

While the bacon is cooking, in a small bowl, combine a "dollop" of the mayo (as much as you'd like for your sandwich) and the hot sauce (I like things spicy, so I added quite a bit, but put as much as you like). I got a little dollop-happy and had a little of the mixture left over :)
Stir until combined.

I always heat my Udi's bread in the microwave for 10-15 seconds beforehand....So heat the bread for a few seconds and then slather the bread w/ the mayo mixture...(I slathered both sides of the bread, the more the better, right?)

Top one slice with the egg, the other with the bacon and combine.

It might be a little messy, but YUM! Enjoy!

Cinnamon Sauteed Bananas~Oh, thank you from the bottom of my heart Julia Child!

So for the past few mornings I've had a banana for breakfast, but this morning I was craving a little something extra. Certain I could find a recipe somewhere for bananas slathered in cinnamon, I went searching for such a recipe...and I stumbled on this masterpiece, courtesy of Mrs Julia Child....hold on to your socks...it's just that good!
