Chili Nacho Dip

Here's a simple nacho dip with only 3 ingredients!...Perfect with tortilla chips! So simple and always a hit!

Ingredients:
1 8 oz block of cream cheese softened
1 can Hormel Chili with Beans (The Hormel chili without beans isn't gluten free)
1-2 cups of shredded Cheddar or Pepper Jack cheese

Directions:

Preheat oven to 350 degrees.

Spread the softened cream cheese evenly in the bottom of an 8x8 baking dish.

Spread the Hormel Chili with Beans evenly over the cream cheese layer.

Sprinkle shredded cheese evenly on top the chili layer.
(I have also used the thin sliced cheese squares for this layer and they work great too!)

Bake uncovered for 25-30 minutes.

Serve warm with  gluten free tortilla chips.

Sausage Cheese Dip

I have to admit...I'm a QVC junkie!  LOVE it! I watch it sometimes just for fun, even if I'm not buying anything!  :) Anyway, one of my favorite lines they carry is the Temptations bakeware!  Such beautiful patterns and great to bake in! One set I ordered a while back came with a pack of recipes too. This has been my favorite one in the bunch! A super simple sausage dip!

Ingredients:
1 pound ground GF sausage (I use Ingles Markets Gluten Free Bulk Pork Sausage)
1 can (10 oz) Rotel tomatoes
8 oz cream cheese
1 cup grated cheddar cheese
GF tortilla chips for dipping

Directions:
Preheat oven to 350 degrees,

In a large skillet brown the sausage over med high heat.
Drain sausage and set aside.

Combine tomatoes and cream cheese in skillet. Cook and stir until cream cheese is melted.

Add sausage back in the skillet. Stir and cook another 5 minutes.

Pour mixture into medium baking dish. Sprinkle grated cheddar on top.  Bake for 5 minutes or until cheese is melted.  Serve with chips.

Slow Cooker Gluten Free BBQ Meatballs

I have always wanted to try a slow cooker meatball recipe.  When I found this one on Pinterest,  I just had to try it!

The original recipe comes from iheartnaptime.net  With only 3 ingredients that can easily be found gluten free, it's a winner!! Perfect for an appetizer or anytime!




1 18 oz GF BBQ sauce (I used Sweet Baby Ray BBQ Sauce)
1 18 oz GF grape jelly (I used our local Ingles Market Brand, it had GF on the label)
2 packages Cooked Perfect GF Frozen Meatballs (about 50)

Directions:
Combine BBQ sauce and grape jelly in slow cooker. Stir till well mixed.



Pour in frozen meatballs



Stir to coat meatballs in sauce



Cover and cook in slow cooker on high for 3 hrs.

Enjoy!

Gluten Free Buffalo Chicken Dip




At every holiday gathering this year, someone brought a buffalo chicken dip, and I am so happy to finally have the recipe!!  It has become my new favorite thing!  And I'm thrilled to be able to make it gluten free :)  Here's how I do it...

Ingredients:
8 oz cream cheese
1/2 cup Hidden Valley Ranch dressing (can add more if you like)
1/2 cup Franks Red Hot Buffalo Wing Sauce (can add more if you like)
1/2 cup shredded mozzarella
2 12.5 oz cans Hormel Premium Chicken Breast (can use just one if that's all you have :))

Heat oven to 350 degrees

Place cream cheese in medium baking dish and spread till smooth

Mix in salad dressing, wing sauce, and cheese. Stir in chicken.

Bake for 20 minutes or until heated through. Stir.

Serve with tortilla chips :)

GF "Smothered" Nachos


One of my favorite Southern Living recipes before going GF was the Smothered Enchiladas. Here's the original recipe from Southern Living http://www.myrecipes.com/recipe/smothered-enchiladas-10000001033063/

I found this recipe again when I was going through some things recently and saw how easy it would be to make it gluten free with just a little tweaking! To make it even easier, I just threw all the ingredients together the other night and served it with nachos...turned out tasty!

Here's the recipe...

1 pounds ground beef
Mt Olive diced jalapenos
1 container Pacific Natural Foods GF cream of chicken soup
1 8 oz. sour cream
1-2 cups Cheddar cheese grated
GF nachos
GF Salsa

Brown ground beef in a large skillet until is no longer pink; drain.
Stir in taco seasoning and cook on low till combined; set aside.

Stir together soup, sour cream, and some diced jalapenos...careful, adding too many will make it spicy!

Pour half of soup mixture into a small baking dish.
Spoon beef mixture evenly over soup mixture.
Top evenly with remaining soup mixture and cheese.

Bake at 350° for 25 minutes or until thoroughly heated. Once cheese is melted, cover with foil for a bit so cheese won't burn. Then remove foil the last few minutes of baking.

Spoon some onto plate, pour salsa on top if desired, and serve with GF nachos.

A Recipe from Southern Living...Tarragon Chicken Salad

Our Southern Living magazine just arrived in the mail, so I thought I'd flip through and see if there were any recipes that were GF or could be made GF...sure enough, I found one! This chicken salad sounds delicious...I'll be trying it soon!

Tarragon Chicken Salad

1 tbsp butter

3/4 cup chopped pecans

1 cup mayonnaise (Hellman's is GF)

3 tbsp chopped fresh tarragon (I also just checked and McCormick has dried tarragon leaves that are GF, you just have to use less if you use dried, maybe around 1 tbsp)

1 tsp lemon zest

1 tbsp fresh lemon juice

4 cups chopped cooked chicken breasts

1 1/2 cups diced Granny Smith apples

1 cup celery diced

1/4 cup finely chopped red onion

salt and pepper

Directions:
Melt butter in a small skillet over med-low heat.

Add pecans and cook, stirring constantly 6-8 minutes or until toasted and fragrant.

Whisk together mayonnaise and next 3 ingredients in a large bowl.

Stir in chicken and next 3 ingredients just until blended.

Add salt and pepper to taste

Cover and chill 2 to 24 hours.

Stir in 1/2 cup toasted pecans just before serving.

Sprinkle with remaining pecans.

Gluten Free Chili Fries

A few weeks ago, Linda over at glutenfreehomemaker.com posted a delicious looking recipe for cheeseburger fries.


I made a few changes and came up with this version...gluten free chili fries....

Here's what I used....

5 russet potatoes
butter
salt and pepper
olive oil
GF taco seasoning (I used this recipe http://glutenfreecooking.about.com/od/glutenfreemixes/r/gftacoseasoning.htm but left out the cumin, cornstarch and sugar and cut up an onion to cook with the beef instead of adding onion powder)
1 1/2 lbs ground beef
1/2 of a medium onion diced

I used Rachel Ray's basic recipe for oven steak fries here http://www.foodnetwork.com/recipes/rachael-ray/oven-steak-fries-recipe/index.html

But I cut the spices down and just sprinkled the potatoes with olive oil, salt and pepper and moved them around on the cookie sheet to coat. With the flavors in the meat, I though the extra spices on the steak fries were too much...

Also be sure to grease the cookie sheet before adding the fries and other ingredients, I just greased it with Earth Balance buttery spread.

Brown and break up the ground beef with the onion till beef is no longer pink.

Drain beef and return to pot.

Add about 2 tablespoons of the taco seasoning to the beef and onion and heat over medium low heat. I also added just a little water to thicken the mixture.

When the fries are done, remove from oven and spoon meat mixture on top. I did not add cheese, but you could add some cheese or cheese substitute if you'd like. We topped ours with some GF ketchup. YUM!

A Recipe from The Pioneer Woman...Zannie's Black Eyed Pea Dip

So right before I was diagnosed w/ Celiac Disease in 2011, I discovered The Pioneer Woman and started gathering up Ree's recipes to try. But before I had the chance to try any, I found out I had Celiac Disease. So I thought her yummy recipes would be pretty much off limits, or would have to be tweaked a lot to make them GF. But here's a great dip from her website that can totally be made GF!  Check out the recipe here...

Unbelievably Fabulous Fruit Dip

This is a recipe for fruit dip that I have used for years....I was so thrilled when I discovered that the only two ingredients in it were GF! It's so delicious, sometimes I just eat it with a spoon...no joke :)

As always, double check ingredients for yourself if you're GF :)

1 jar Jet Puffed Marshmallow Cream
1 block Philadelphia Cream Cheese or 1/3 less fat Philadelphia Neufchatel

Put the ingredients in a bowl and combine with a hand mixer. Mix till combined and smooth. Serve with fruit...my faves ~ strawberries and pineapple!

The original recipe uses the full fat cream cheese. The 1/3 less fat recipe is oh so yummy too though :)
