Creamy Chicken Casserole

I've been trying to find new recipes that my picky food allergy family will eat. This has not been an easy task! But lately I've decided to just keep it simple.  I found a super easy chicken casserole recipe at and changed it up just a bit.  It turned out wonderfully! And even better the kids and Hubby LOVED it!

3-4 boneless chicken breast cooked and diced.

1 carton Pacific Foods Gluten Free Condensed Cream of Chicken Soup

1 8 oz sour cream

I small onion diced

frozen green peas

shredded cheddar cheese

salt and pepper to taste

instant gluten free rice

Combine chicken, soup, sour cream and onion. Stir till well mixed.

Fold in a small amount of frozen green peas, as many as you like.

Pour mixture into greased baking dish and top with shredded cheddar.

Bake for 30 minutes or until bubbly.

Serve over cooked gluten free rice.

**I usually double this recipe so I'll have plenty for leftovers :)
